fix(build): use python3.pkgs instead of python312Packagesnix
With NixOS 25.11 the over specificity in pystitch.nix (but not default.nix) led to:
error: Python version mismatch in 'inkstitch-git':
The Python derivation 'inkstitch-git' depends on a Python derivation
named 'python3.12-pystitch-0-git', but the two derivations use different versions
of Python:
'inkstitch-git' uses /nix/store/3lll9y925zz9393sa59h653xik66srjb-python3-3.13.9
'python3.12-pystitch-0-git' uses /nix/store/fdibxyh7xcmqrc172y78awzhxs292gq1-python3-3.12.12
